Finca El Potrero is located in Antigua, Guatemala, which is known for its coffee and volcanoes. This farm is certified for organic production and was started as an agroforestry project by the Guatemalan government. After years of soil depletion due to cow grazing, farm owner Juan de Leon and farm manager Josue Morales have worked hard to work nutrients back into the soil by re-integrating coffee product from the wet milling and harvesting process. The farm is also home to a variety of pine and native trees that are used to keep the farm's organic matter and moisture levels healthy throughout the year. Finca El Potrero used a washed process for their coffee, which is dried fermented for 36 hours before washing. Afterwards, the drying process takes about 21 days.
