ABOUT
This lot comes to us from Yaxcoffee, an organization of specialty coffee producers in Chiapas, founded in 2011. Yaxcoffee is focused on improving the quality of life of the families of their producer members. They assist all members in the production, storage, processing and marketing of their high quality organic specialty coffee. YAX means "green" in the indigenous language Tzeltal.
Yaxcoffee refers to the indigenous concept of the members of the cooperative who consider "Mother Earth" as the base of any life.
Today, Yaxcoffee has over 1500 specialty coffee producers. Most producers have between 1-2 hectares of land. Each Yaxcoffee producer depulps their coffee by hand before letting it dry on small patios in their homes or near their farms. A majority of the specialty coffee producers of Yaxcoffee are Tzeltales and Choles indigenous groups. They are strongly connected to the Maya culture, customs and traditions.
