This fully washed coffee is hand sorted at delivery to ensure the highest quality. The selected cherries are then pulped, fermented and cleaned in fresh river water. They are then and sorted again and dried on raised beds for 3-5 weeks. Finally, the parchment undergoes a final grading process when they reach optimum moisture content before milling.
