Jaun Bautista Fajardo is part of the Alianza Cafe Association, located in Buesaco, Narino. His farm, Fatima, currently has 3 hectares under production and he has about 12,000 trees. Fajardo incorporates an 18 hour fermentation process followed by drying the beans in raised parabolic beds as well as on patios in the sun in order to produce the best results. He, along with other members of Alianza Cafe Associaton, provide high quality micro lots and continue to incorporate new and innovative ideas into their coffee processing in order to provide a unique and complex cup.
