The production roast cupping revealed a crisp, balanced cup. Clean, integrated notes of peach, cherry, and black tea were present in the cup. After the cupping, I brewed a V60. The brew had a sweet, mouthcoating texture with layered notes of ripe peach, cherry, and black tea. The cup had depth with clean, integrated notes. This lot comes to us from Yoher Bustos of Los Cristales in El Cedral Bajo, Huila, located around 1,900masl. While his parents own Los Cristales, Yoher has managed it for the past 8 years to support his family's livelihood, which is 100% provided by the farm. To produce this lot, ripe cherries are first harvested and floated for sorting before undergoing 12 hours of oxidation in the hopper. After processing through the hopper for depulping, the cherries are fermented in tanks for 80–100 hours. The coffee is then washed and transferred to covered drying beds for 8–20 days.
