Guatemala SHB Huehuetenango - La Democracia (GP)

This lot comes from La Democracia in Huehuetenango, Guatemala, a region celebrated for its unique microclimate and exceptional conditions for producing specialty coffee. Farms are situated between 1,400–2,000masl, where the warm winds rising from Mexico and cool mountain air create a natural thermal barrier that protects coffee trees from frost and allows them to thrive.

The high altitude encourages slow cherry maturation, resulting in dense beans with a complex accumulation of sugars and organic acids. Coffee production in La Democracia is driven by hundreds of small-scale producers alongside a handful of historic family estates. Due to the region's remote location, a strong tradition of independent wet milling has developed here. Rather than delivering cherries to centralized processing facilities, many smallholders process their own harvests, fermenting and washing the coffee on their farms. This approach has created a tradition of quality control that has become a defining characteristic of the region today.
