This pink bourbon lot comes to us from La Florida farm in Algeciras, Huila. Located at 1800masl, this 3-hectare farm has been run by Jarbinson Arias and his family for the past five years. Aside from milling, they carry out every part of coffee processing at La Florida.

To produce this lot, the cherries are first harvested and floated. Then, they're put under a controlled oxidation for 24 hours before being de-pulped and placed in fermentation tanks for 36 hours. After that, they're carefully washed to remove impurities before being patio-dried for 20 days.

This coffee is special because of the nutrients in the soil, but it's even more special because of how important it is to the Arias family that their coffee is cared for at every stage before reaching the customer.
