About The Class

The Brewing Foundation Course introduces students to the different methods of brewing coffee.  Students will receive theoretical and practical hands-on instruction for a range of devices including automatic and manual gravity brewers, as well as other commonly used brew devices.  Students will also explore how to produce a tasty brew based on an understanding of the essential elements of brewing and an analysis of their brews.

Specifically in this course we will cover:

  • Basic Coffee Knowledge:
    •  The Origins of Coffee
    • Sensory Impact of Species and Variety
    • The Impact of Freshness on Quality
  • Brewing Methods and Equipment:
    • Brewing Methods
    • Brewing Devices
    • Grinders
  • Brewing Guidelines:
    • 7 Essential Elements of Brewing
    • Coffee to Water Ratio
    • Grind Setting
    • Brewing Time
    • Brew Temperature
    • Brew Turbulance
    • Water Quality
    • Filter Media
    • Hot Brewed Coffee Hold Time
  • Brewing Process
  • Brew Analysis
    • Describing the Brew
    • Balanced Brew
    • Optimum Extraction
    • Optimum Concentration
    • The Brew Control Chart
  • Cleaning and Maintenance
