The definition of extraction is “the action of taking out something, especially using effort or force.”  Well, during this course we will be focusing on coaxing the solubles out of both coffee and tea to take the best of the bean or leaf and therefor create a well-balanced cup.  Hopefully we will not need to use force.

This 3 hour workshop will help to hone in our brewing skills as well as take an in depth look into the science of extraction.

Instructor: Maxwell Pollock

Maxwell C. Pollock is the director of tea at Royal Tea New York. As the company’s leader, Maxwell directly negotiates with suppliers at origin to acquire quality teas at great pricing for Royal Tea NY’s customer base. In addition, Pollock assists clients with their tea needs and guides fellow tea traders on their tea journeys. Prior to assuming the leadership role in Fall 2018, Maxwell worked exclusively in managing several of Royal’s tea accounts as a company salesperson. Before joining the Royal team, Pollock acted in management and training positions at Teavana, a multi-store national loose leaf tea vendor bought by Starbucks, from Fall 2012 to Fall 2016. Apart from selling tea, Maxwell enjoys music, cooking and tennis.”
